Plant-based cooking without compromise

Plant-based cooking is not about giving things up.

About the workshop

Plenty of people still think plant-based food is monotonous – steamed vegetables and dull salads. In reality the range is enormous, provided you know the techniques that give a meat-free dish body, weight and depth of flavour.

In this session we show you how to get the most out of vegetables, pulses and plant-based alternatives. The point is not what is missing from the plate, but the textures and flavours you find once you stop compensating.

What you will learn

  1. 01

    Umami without meat

Where depth comes from: roasting, fermentation, dried mushrooms, miso, tomato.

  2. 02

    Textures

Crisp, creamy, crunchy – making a plate interesting instead of imitating something else.

  3. 03

    Pulses, properly

Soaking, seasoning and when to salt – the difference between “fine” and “more, please”.

  4. 04

    Hot and cold

Building a full menu from starter to main, entirely plant-based.
